Vegan Couscous Salad
Couscous can be combined in a variety of ways. Here is a variation with avocado. Have fun after cooking!

Ingredients for 2 servings
100 g couscous
200ml boiling water
3 stems of parsley
Approx. Seeds of a ½ pomegranate
1 handful of baby pinat
2 small avocados
2 tablespoons oil
2 tbsp almonds, roughly chopped
Optional: turmeric, cumin
Add couscous to the boiling, salted water, simmer for 5-10 minutes, then cool.
Turmeric and cumin and coriander to taste
Peel and dice the avocado. Wash the radish and cut into thin slices.
Add pomegranate seeds, avocado curd, almonds, radishes, spinach and coriander and parsley to the couscous. Season, marinate with oil and taste.
